SÜHRING, German Cuisine Redefined at its Finest Class

Bangkok is a city of foodies and never ceases to amaze both local diners and out of towners with a exceptional restaurants opened up in the hidden street —foremost among them is a family-run restaurant, Sühring, which serves an excellently crafted menu of traditional German fare with contemporary influences, created by the identical-twin chefs Thomas and Mathias Sühring.

Hidden down a quiet soi in Yen Akat, brothers Mathias and Thomas Suhring serve thoughtful, refined German fare inside a homey mid-century home. Taking over a beautiful house built in 1970 on Yen Akat Road, Sühring has transformed the area into a cozy eatery with a feel-like-home atmosphere. The space can accommodate up to 64 diners in 3 separate dining areas filled with the drawings and photos from the chefs’ home in Germany.

Meanwhile, the “Winter Garden” encased in glass with a view of an attractive backyard exudes a romantic atmosphere with a sense of nature.

The main dining area “Living Room” is welcoming with transparent floor-to-ceiling windows showcasing the beautiful leafy trees outside. The shiny wood floors strike amazingly through the muted white walls creating feelings of tranquility and relaxing to the area. Suhring’s ambience was relaxed and homey yet elegant, particularly located in a quiet neighbourhood in the centre of Bangkok.The glass house is a beautifully restored townhouse on Yen Akart Road that retained the building’s original floor plan. Like a home, it has cookbooks lined up on shelves, and comfortable cushions all around.

Lastly, at the back of the house hides the “Kitchen” where guests can witness the cooking process as their food is being prepared.

Sühring is operated by the Berlin-born twin brothers Thomas and Mathias Sühring whose passion in cooking began while spending most of the time in the farm with their grandmother during the summer breaks, learning traditional German cooking techniques.

In a city where German cuisine usually starts and ends with greasy wursts and schnitzel, the carefully curated menu at Suhring adds some welcome sophistication to the eastern European dining scene. On offer are both tasting and a la carte menus that feature dishes using German flavours with gastronomic flair like the Spätzle pasta, which is generously topped with Allgäuer mountain cheese, or the Berliner Pfannkuchen, a traditional German pastry made from sweet yeast dough and filled with black truffle cream.

The food here concentrates on the new German cuisine which combines authentic flavors with modern and innovative techniques, offering 2 different types of menu: Sühring Experience—chosen by us, a set menu of 8 or 12 courses; and A la carte—chosen by you. And to keep things fresh and exciting, the dinner menu will be changed on a seasonal basis.

We got to experience a delightful, homey and creative culinary journey divided into 3 different chapters - just like a harmonious symphony.

The German culinary journey begins with Leberkase: a small beer mug of shandy with quail egg, delicious sausage on a small toast, goes on to finger-food items and main dishes like Wild salmon, Currywurst in Potato Wafers, Roasted beef & shrimps, chicken salad and Enleta.

Currywurst - Chefs' innovative version of sausage and curry, served with house-made a cute little wooden folk.

Next was Enleta, it was elegant from the name to the presentation.

All the purest essences of spring come into one plate and one bite, all revealed in refreshing flavors and texture.

Apricot vinegar wine was perfect for the transformation between the Chapter one ( the appertizers ) and Chapter two ( the main courses ).

The legendary home made sourdough bread and smoked butter, pork fat mixed with herbs and the highlight was special caviar handpicked by Chefs from Netherlands. I can tell the caviar was of very fine quality, not too salty and the texture was very creamy and juicy.

While we were enjoying some of the last appetisers, the Chef presented us a whole Hungarian roasted duck on a bed of special herbs...Mamamia, the fragrance of the smoke from the herbal nest took me to the heaven immediately even before having the real duck! It was indeed a very appealing personal story telling about the Hungarian duck come from the Chefs' childhood travel memory from Germany to Hungary.

Roasted beef and shrimps

Crayfish & pumpkin - I never expected pumpkin could be that tasty. What a creative use of pumpkin seed oil on the garnishing side - truly surprising pleasant and delightful.

Sander and speck - The tastes and texture were dancing in my mouth with crispy dills topping.

Before embarking on the highlight of the main course chapter - the Hungarian roasted duck, I can select my favorite knife from the Chef's personal collection, all of German finest quality and rare woods from South America, Africa and South East Asia.

The last course of the Chapter two: Hungarian roasted duck with perfect pink color of roasted duck - each bite were so tender and melting in my mouth with delicate flavour of coffee caramelized on the skin.

Moving on to Chapter three - A chapter of Sweet and Comfort - I would say. The first course was Lemon tart. For me it's Lemon tart redefined with creative use of lemon sorbet and baby basil leave and basil oil. It seemed the summer were coming to me now, with the natural gifts from the garden: citrus fruits and basil leaves.

In the end we were presented the recipe book of the Chefs' Grandmom with her original handwriting! What a culinary treasure and heritage! Eventually, gastronomy, like any other human being's creation, is needed to keep alive and breathing from generation to generation through passionate and talented Chefs like Thomas and Mathias Sühring.
